Breakfast- Veggie Egg Muffins

4 eggs 4 egg whites
Veggies ( Green and red peppers, Yellow onions, mushrooms, and spinach)
Salt/pepper/garlic

 

Directions: Mix the eggs and the egg whites, salt, and pepper in a measuring cup. In a pan, add olive oil and saute peppers and onions for 5-7 minutes. Add the spinach and mushrooms and mice garlic after and saute for an extra 2 minutes. Combine the veggies with the eggs and whisk. Preheat oven to 350 degrees, spay muffin pan with cooking spay, pour mixture and bake for about 15 minutes, it will make about 12 muffins. Top with hot sauce and enjoy!

 

Lunch- Chicken Tacos

Ingredients:

3 Corn Tortillas
Shredded chicken
Pico de gallo
Cilantro
Lime
Avocado

Optional:

Shredded lettuce
cheese

Directions: In a bowl, mix the shredded chicken, Pico de gallo, lime juice and avocado. In a pan, heat up the tortillas in both sides until ready. Pour in the chicken mixture to tortillas, add cilantro and salsa and top and enjoy!

Dinner- Southwestern SaladSouthwestern Chopped Salad with Buttermilk Ranch Dressing

Ingredients:

Lettuce
Tomatoes
Black beans
orange peppers
Avocado
Corn
Protein ( chicken/fish/turkey)

Directions: Chop all the ingredients and mix into a bowl of lettuce. Top with your favorite dressing!
